Here at Indigo’s we pride ourselves on serving the finest Indo-Chinese food, from our delicious vegetable Hakka noodles to our fantastic paneer Manchurian sauce! However, on the surface of it, Indian food and Chinese food are as different and varied as the lands they come from. Chinese food is so mouth wateringly savoury, the taste of umami and tasty noodles. While Indian food is exciting and zesty, with a range of hot and sweet spices. Have you ever wondered how they came together?


It all started, as fusion food usually does, with a mass migration. In the late 1700s Hakka Chinese (people from the provincial areas of Guangdong, Fujian, Jiangxi, Guangxi, Sichuan, Hunan, Zhejiang, Hainan and Guizhou), moved to Kolkata (formerly Calcutta) to escape the turmoil in China. They started their own ‘Chinatown’ Which became known as ‘Cheenapara’ and soon it became so large a second town of ‘Tangra’ was formed.


They settled in their adopted country, working mainly as tannery owners, dentists, beauticians and shoe shop owners. However, it was from their restaurants and Dhaba’s (street vendors) they really started to thrive. They took the comfort food from their own homelands and mixed it with the available ingredients they found in India.


So Indo-Chinese food was born and rocketed in popularity! Using Chinese cooking methods like pan frying in a wok, zesty Indian herbs and spices like chilli, coriander and garam masala are mixed with full bodies flavours like soy sauce, tomato and garlic. They incorporated the Bengali favourites of paneer, honey and tamarind into their dishes and it was embraced by people from all backgrounds.


From the beginnings in Kolkata’s Chinatown it raced through the rest of the world with Indo-Chinese restaurants springing up all over, from Australia to America, it is a taste sensation that has been taken to the hearts of all different countries and cultures.
